Sandy Lane Hotel, an AAA Five Diamond, Forbes Five-Star exclusive resort and a member of Leading Hotels of the World, is seeking to recruit a Wine Sommelier and a Wine Waiter in the Food and Beverage Department.

Wine Sommelier

The Role

The Wine Sommelier will report to the Food and Beverage Manager and Head Sommelier and will be responsible for the wine service to guests.

Key duties and responsibilities:

Provides knowledgeable and attentive wine service to the guests.

Maintains proper inventory controls of the wine cellars

Updates the wine list and is responsible for the maintenance and stock controls of all glassware, and wine service inventory.

Maintains a clean and hygienic working environment.

Assists the service teams in any capacity as requested by the Restaurant Manager.

Ensures that proper vintages are being used

Handles complaints as well as lost and found

Completes closing duties

Assist with training new and existing Champions on the service of wine and five Diamond Standards

Our ideal candidate must possess:

• •A good secondary school education
• and at least two years’ experience with relevant skills in a fine dining restaurant

A thorough knowledge of wines, wine making, spirits, liqueurs, cognacs, etc.

WSET or Court of Master Sommelier Foundation or Intermediate Course

Excellent written and oral communication skills as well as good computer skills

Ability to work under stress calmly and be professional in a fast-paced environment

Ability to stand and walk for a full shift, carry heavy loads and able to work under stress calmly and professionally

Wine Waiter

The Role

The Wine Waiter will report to the Food and Beverage Manager and Head Sommelier and will assist with the wine service to guests.

Key Responsibilities:

Work as a member of a team with other wine waiters and servers to graciously ensure the sales of wines and other beverages to guests

Assist with maintaining the proper inventory control of all wines cellars per Sandy Lane standards

Assist with the daily maintenance and stock controls of all wines and cellars

Assist with handling guest queries and complaints professionally, ensuring resolution to either of these

Assist with completing opening/closing duties as per assigned shift

Assists with ensuring that wine cellars are in immaculate appearance and order

Our ideal candidate must possess:

A good secondary school education and at least two years’ experience with relevant skills in a fine dining restaurant

A good knowledge of wines and spirits

Good written and oral communication skills as well as good computer skills

Ability to work under stress calmly and be professional in a fast-paced environment

Ability to stand and walk for a full shift, carry heavy loads and able to work under stress calmly and professionally

The successful candidates must be well groomed and enthusiastic and will be required to work flexible hours.
