Job Responsibilities
- Leading a team of Ruby Lounge Supervisors, Management Advocates, Lead Captains, Captains and Service Attendants. This position will be accountable for planning, coordinating and managing staff and services to ensure the Ruby F&B operations run efficiently and effectively and that customer service standards are maintained at all times.
- This role will encompass the formulation and implementation of operating procedures and standards, the management and development of team members, and liaise with the Manager to ensure that Marina Bay Sands’ short- and long-term goals are met with respect to the Ruby F&B operations.
- Support the objectives of the Manager to achieve the financial, service and other related goals that have been set for the Ruby Lounge through diligent and proactive management skills.
- Represent the Manager during his/her absence.
- Work with service team and culinary team in service and food preparation to minimize wastage and increase productivity and efficiency. Review operating results with the team and identify opportunities to improve performance.
- Ensure all cashiering procedures are processed in compliance with accounting standards.
- On a regular basis, inspect table set-ups; check for cleanliness, neatness of the Level 3 Private Pits/Salons, Level 2 Atrium/Pits/Salons and Ruby buffet/gaming environment is in accordance to our hygiene standards.
- Review the station allocation and VIP arrivals and follow up on all special requests.
- Ensure that the Master Wine Lists are available and in good condition for each meal period and review it quarterly.
- Anticipate festive, public holidays, tournaments, events, concerts period and organize procedures to handle heavy crowds and seek support from other outlets where appropriate.
- Ensure pre-shift meetings with staff are carried out and review all information pertinent to the day's business.
- Monitor guest reactions and confer frequently with team members to ensure guest satisfaction.
- Respond to guest comments, requests and complaints and report in Daily Updates where appropriate in a timely and professional manner. Take personal responsibility to resolve issues and involve Service Management if necessary.
- Daily checks to be done on Responsible Alcohol Service (RAS) and to report, record and resolve any issues pertaining to it. This will be communicated to the Casino Manager or International Marketing Shift Manager on duty. If the guest becomes unruly or disruptive, security will be activated to assist with the situation.
Job Requirements
- Education & Certification
- Certificate or Diploma in Restaurant Management or extensive F&B experience
- Experience
- A minimum of 3 years’ experience at a managerial level in a 5-star hotel or a deluxe restaurant
- Other Prerequisite
- Fluent in English, knowledge of additional languages is a plus.
- Knowledge of cuisines, their preparation and service.
- Be willing to work any day and any shift.
- Have a well-groomed, professional appearance.
- Able to perform under pressure.
